Basil Chicken Salad


I'm going to get better at food styling...but this was a recipe I made towards the beginning of summer. It's light and fresh as well as a sinch to make!

BASIL CHICKEN SALAD
1 rotisserie chicken, picked of the meat (get rid of the skin)
1/2 cup Greek yogurt, plain
1/2 cup sour cream, light or full fat
1/2 a lemon, juiced
1/4 cup basil pesto, prepared
1/4 cup fresh basil, chopped
salt and pepper, to taste

INSTRUCTIONS
1.) Chop the basil in ribbons; add to picked chicken in a large mixing bowl.
2.) Combine all ingredients and chill in the refrigerator until ready to eat.
3.) Serve on an English muffin or in lettuce leaves (these options are MY favorite...but eat it however you'd like!)

I've decided that I want to keep blogging...keep giving my friends & family recipe ideas...& keep sharing my thoughts in general.  When I was in Colorado last summer, I used my blog "Cooking is Love" to share my shenanigans while I was away. Now I intend to use "Live Your Dream & Share Your Passion" as a way to keep in touch with everyone on a more meaningful level. There will still be PLENTY of food pics...& I have a feeling this blog will evolve as I get rolling on it! Thanks for your interest whoever is out there following this...it might get random :)
