I did take a "selfie" of Shawn Johnson and I--very frantically--because sometimes moments are fleeting! I'm learning to embrace said moments...they are God's ways of showing us He's thinking of us :)
Blogging is a way I can document my life in pictures, so why not have my blogging "drought" be replenished by an exciting event in my career?!
On Friday, June 21st 2013, I had the honor of putting on a Luncheon through the organization March of Dimes. I represented Hy-Vee, along with Chef Tracy (Waterfront Hy-Vee in Iowa City) and Chef Ron Hall (Mercy Hospitals, Iowa City). Our part was to prepare a five-course meal for Olympic gymnast Shawn Johnson along with her parents and best friend, as well as the three teen aged girls who's parents bid on her to win the package.
Everyone was excited to be there in the Waterfront Hy-Vee club room! There was a question-and-answer-session to start with, followed by the meal and an autograph signing.
The salad was a Grilled Peach Salad with White Balsamic Dressing, Toasted-Sliced Almonds and Goat Cheese
Soup: Shrimp Gazpacho with Avocado Cream (I'm crazy about avocados!!)
Entrée: Cilantro-Lime Chicken with Ancient Grain-Roasted Root Vegetable Medley & Polenta Cake with Caramelized Onions and Honey
Dessert: Strawberry Almond Short Cake with Basil Syrup and Devonshire Cream
When all was said and done, I had the "time of my life" and received an autographed menu as well as Shawn's book, Winning Balance, which is full of insight into her structured lifestyle. This young woman has an amazing faith, work ethic and family to support her, which is evident reading her words on paper. I encourage all the ladies (as well as men) out there to give this book a read!
